Hello hello- it's Alison your summer snack guide.
Got a sweet and tangy treat for you and a friend to enjoy.
I LOVE salads in summer!
Fruits and veggies are in season, no hot stove, not much prep, and for me cool food is more satisfying when the weather's hot than in cool weather.
This one's perfect for a between-meal snack, or add some protein like grilled chicken to make it a complete meal for lunch or dinner.
1/2 bunch spinach, rinsed and torn into bite-size pieces
1 C + 2 Tbsp sliced strawberries
2 Tbsp EV olive oil
1 Tbsp white wine or cider vinegar
1/2 tsp dijon or grainy mustard
1-1/2 tsp sesame seeds
3/4 tsp poppy seeds
dash of salt and pepper to taste
optional: add a 1/4 C crumbled feta (not if you're cleansing!)
1) In a large bowl, whisk together the oil, vinegar, mustard, salt, pepper, sesame and poppy seeds.
2) Add the spinach, feta, and strawberries and toss
3) (optional) Slice grilled chicken and place on top when serving
