Veggie Dip MADE OF Veggies!

Hey hey summer snackers, Alison here with another simple snack idea BURSTING with flavor and veggie goodness. This is my go-to snack when I'm in "cleanse" mode: no dairy, no starch, full of nutrition, flavorful and satisfying, with low calories and low glycemic index.


What's your favorite veggie?

I love making a healthy vegan dip for my veggies- out of veggies!!

I basically freestyle, depending on what I have around, and make it right in a large mason jar with my immersion (stick) blender so I can have it on hand all week for snacking.






Here's the general idea:

fill the jar 3/4 full with clean mushrooms cut into quarters

add:

• 1-2 serrano chilis (to taste)

• 1 small clove garlic

• juice of 1 lime or lemon

• 2 Tbsp vinegar (any kind)

• 1 Tbsp EV Olive Oil

• 1 Tbsp fresh cilantro, flat leaf parsley, or any

of your favorite herbs

• Salt & Pepper to taste

• Add a little filtered water if it's too thick



Pour some into a bowl and start dipping your snack veggies!



I love doing this w/ mushrooms because they actually burn more calories to digest than they contain!

But you could try it with tomatoes, cucumbers, avocado, or some combination of what you have around.

Try roasting an eggplant and blending that up!

YUM!


MODIFICATION:

Add more vinegar and use as a salad dressing!
